  • Large pot + salted water
  • Step-by-step

  • Make the dough. Mix flour, eggs, and salt until a shaggy dough forms.
  • Knead. Knead until smooth and elastic.
  • Rest. Wrap and rest to relax the gluten.
  • Roll out. Roll to your preferred thickness.
  • Way #1 (confirm from video). Shape or cut into Pasta Style 1.
  • Way #2 (confirm from video). Shape or cut into Pasta Style 2.
  • Cook. Boil in salted water until just tender.
  • Sauce + serve. Toss immediately so the pasta absorbs flavor.
  • Tips

  • If the dough is too dry, add a little water.
  • If the dough is too sticky, dust with flour.
